Easter is just around the corner, and who doesn’t love Easter candy? I love Easter candy. I think it is better than candy at any other holiday. My favorite Easter candy is Cadbury Mini Eggs. They have a crunchy thin outer shell and rich creamy chocolate inside.

My husband, on the other hand, loves chocolate chip cookies. He could eat them three times a day, every day. So, when I found this recipe, I just had to try it. It is the perfect marriage of chocolate chip cookies and Cadbury Mini Eggs.

Chocolate Easter Egg Cookie Recipe

2 1/4 cups flour
1 teaspoon baking soda
1 teaspoon salt
1 cup butter flavor Crisco
3/4 cup white sugar
3/4 cup packed brown sugar
1 teaspoon vanilla
2 large eggs
2 cups Cadbury Mini Eggs

Mix flour, baking soda and salt in a bowl and set aside. Throw Crisco, brown sugar, white sugar and vanilla in a mixer and beat until creamy on high. Add the eggs one at a time and beat after each egg is added. Turn mixer on low and slowly add flour mixture to the dough in the mixer. Chop Cadbury Mini Eggs into large chunks and then add them to the mixer. Mix just until combined.

Put rounded tablespoons of dough onto ungreased cookie sheet. Bake at 375 degrees for 9 to 11 minutes.
