I absolutely love fresh vegetables in the summer. This recipe takes two crisp vegetables and mixes them together with the zest of vinegar. This recipe tastes good and is good for you.

One of my favorite veggies is onions. I don’t care whether they’re red, sweet, yellow, Vidalia, or green, I love them all. My husband doesn’t care much for my love of onions for some reason. His favorite type of onion is red, so that is why I used in this salad. You could use any large type of onion that you like in this recipe.

Summertime Cucumber Onion Salad

1 large cucumber, peeled and thinly sliced

1 large red onion, thinly sliced (into rings)

3/4 cup white vinegar

3/4 cup water

3 teaspoons sugar

1 1/2 teaspoons salt

1 teaspoon ground pepper

Throw the sliced cucumbers and onions into a bowl. In a separate smaller bowl, pour the vinegar, water, sugar, salt and pepper. Whisk together until well combined. Pour the vinegar mix over the cucumbers and onions. Place a lid tightly over the top of the bowl. Keep refrigerated.
