I was wanting something a little different for dessert the other night, so I decided to search my favorite website Pinterest to see what I could find. I found this delicious sounding recipe that reminded me a bit of spring, thanks to the fruit. So, I whipped up this dessert and I was not disappointed. It was very simple and very delicious.  

Fruit and Cream Cheese Dessert

1 package fruit flavored gelatin

2 cups boiling water

2 cups crushed graham crackers

1/4 cup sugar

1/2 cup butter

8 ounces cream cheese, soft

8 ounces cool whip, thawed

1 cup sugar

1 bag of frozen fruit (same as gelatin), thawed

Mix gelatin and hot water, and then set it aside to cool. Stir the 1/4 cup sugar and crushed graham crackers until mixed in a 9x13 inch pan. Melt the butter in the microwave and then pour over the graham crackers. Mix the butter into the crackers until moist and then mash the crackers with a spoon, creating a graham cracker crust on the bottom of the pan.

Beat cream cheese and one cup of sugar on medium speed in a mixer until well combined. Stir the cool whip into the cream cheese mix using a spatula, then spread it over the graham cracker crust. Be sure to spread all the way to the edges of the pan, so the gelatin mix will not sink down into the crust and make it soggy. Place in the fridge for 30 minutes.

Take the pan out of the fridge and sprinkle fruit over the top of the cream cheese and cool whip filling. Pour the cooled gelatin over the fruit and put the pan back into the fridge until the gelatin sets.
