Fall Recipe: Garlic Orange Beer Chicken
Well doesn't this sound delicious? It is! Garlic Orange Beer Chicken in the crock-pot even.
Ingredients needed:
1
bottle (12 oz) beer ( I used Cold Smoke)
1
can (12 oz) frozen orange juice concentrate (not thawed)
3
teaspoons finely chopped garlic
8
pieces (2 1/2 to 3 lbs) boneless skinless chicken thighs ( I chose to use breasts)
2
teaspoons poultry seasoning
Salt, to taste
Chopped fresh parsley and orange slices.
BONUS Items:
Mushrooms, bread crumbs, Serrano peppers and butter.
Betty Crocker has the recipe and it was much better then I expected it to be.
Directions
- 1 In 6-quart slow cooker, mix beer, frozen orange juice concentrate and garlic.
- 2 Place chicken thighs in single layer on top. Sprinkle tops of chicken thighs with poultry seasoning and salt.
- 3 Cover and cook on Low heat setting 6 to 8 hours or until or until juice of chicken is clear when thickest part is cut (at least 165° F). Serve topped with chopped fresh parsley and orange slices.
Afterwords while I was cooking the rice I decided to try to bake it a bit to make the top crispy, added some bread crumbs, mushrooms and Serrano peppers and baked it at 350 degrees for about 15 minutes. Careful not to dry it out ( which is where the butter comes into help)
Add Orange slice and a spritz od it on the chicken, rice and parsley as a garnish. Nom nom nom
