I was on the phone with my sister last week and she was baking cookies for a local bake sale. She told me she had six dozen cookies to make. I asked her how she had enough time to make all those cookies. She told me she had a secret recipe that is only three ingredients, and the cookies bake for only 8 minutes, so it didn’t take much time at all. The best thing about these cookies is that you only have to change one ingredient and you can have a variety of different cookies. I was a bit skeptical when she gave me the recipe about how these cookies would turn out. To my surprise, and my kids and husband’s delight, they were great!

Three Ingredient Cookies

1 cake mix (we love chocolate or lemon)

1 egg

1/3 to 1/2 cup oil

Beat all the ingredients in a bowl just until mixed together. Don’t beat the mixture for 2 minutes like you would for a cake. Spoon the dough onto a cookie sheet and bake at 350 degrees for 8 minutes. My husband, who is a fan of Lofthouse cookies, absolutely loves these cookies because they are soft and sweet. You can frost them if you like, but these cookies are great without it too.
