The recent colder weather has been making me itch for some pumpkin. I can taste it. Fall is just around the corner, and with it comes pumpkin season. It’s the time of year when pumpkin flavored everything appears.

My family’s favorite cookie is chocolate chip. What better way to celebrate the changing of the season, then smashing my favorite flavor and my families favorite cookie together. It’s the best of both worlds. This recipe gives you a classic cookie and a seasonal flavor favorite.

Chocolate Chip Pumpkin Cookies

1 cup canned pumpkin

1 egg

1/2 cup coconut oil, melted

1 cup white sugar

2 cups flour

2 teaspoon baking powder

1 1/2 teaspoon pumpkin pie spice

1/2 teaspoon salt

1 teaspoon baking soda

1 teaspoon milk

1 tablespoon vanilla

1 bag chocolate chips

In a large bowl, throw pumpkin, sugar, coconut oil and egg together, and then whisk until well combined. In a small bowl pour baking soda into milk and stir until soda is dissolved. Add milk and baking soda mixture into the whisked ingredients and whisk again.

Pour the flour, baking powder, pumpkin pie spice and salt on top of the wet ingredients. Stir with a wooden spoon or spatula just until combined.

Add vanilla and chocolate chip,s and stir again until combined.

Scoop rounded tablespoonfuls of dough onto a cookie sheet and bake for 10 to 12 minutes at 350 degrees.
